“Milagu Vadai – 5 Easy Steps to Make Temple-Style Pepper Vadai at Home” 🛕🌶️
🌀 Milagu Vadai – Crunchy, Sacred & Simple
Milagu Vadai (மிளகு வடை), also known as Anjaneyar Kovil Vadai, is a traditional South Indian snack offered as prasadam in Hanuman temples across Tamil Nadu. Made with urad dal and black pepper, it’s known for its divine crunch and bold flavor. Whether you're preparing it for Hanuman Jayanthi or just craving a peppery tea-time treat, this 5-step method brings temple-style authenticity to your kitchen.
📝 Ingredients You’ll Need:
- 1 cup whole urad dal
- 1–2 tsp black peppercorns
- 2 tsp rice flour
- 1 tsp ghee
- A pinch of asafoetida
- Salt to taste
- 1 tsp hot oil (for mixing)
- Oil for deep frying
🔥 Step 1: Soak and Grind
Wash and soak urad dal for 30 minutes only. Drain completely and grind coarsely with pepper and salt.
💡 Tip: Do not add water while grinding. The texture should be coarse, not smooth.
🌀 Step 2: Mix and Bind
Transfer the ground mixture to a bowl. Add rice flour, ghee, asafoetida, and 1 tsp hot oil. Mix well to form a firm dough.
💡 Tip: If the dough feels sticky, add a pinch of rice flour.
🫓 Step 3: Shape the Vadai
Grease a banana leaf or plastic sheet. Take lemon-sized balls of dough, flatten them gently, and make a hole in the center.
💡 Tip: Grease your palms for easier shaping.
🍳 Step 4: Deep Fry
Heat oil on medium flame. Slide the vadai gently into the oil and fry until golden brown and crisp.
💡 Tip: Wait until the oil stops bubbling before removing.
❄️ Step 5: Cool and Store
Drain excess oil on paper towels. Let the vadai cool completely before storing in an airtight container.
💡 Tip: Stays crisp for 4–5 days. Ideal for festive gifting.
